Hennessy is made from grapes harvested from vineyards in four Cognac crus – Grande and Petite Champagne, Borderies and Fin Bois. The company has one of the largest reserves of Cognac in its cellars and ages over 300,000 casks (each made in Hennessy's own cooperage), of which many are more than 100 years old, and some as much as 200. Once the barrels are judged to have reached their peak in the oak, a portion of the spirit of each is moved to glass demijohns to await final assessment and blending trials – a daily ritual at the company's headquarters.

軒尼詩干邑採用產自乾邑四大產區－大香檳區、小香檳區、博德里區和芬布瓦區的葡萄釀製而成。公司酒窖擁有全球最大的干邑儲量之一，陳釀超過30萬個橡木桶（每個橡木桶均由軒尼詩自有製桶廠製造），其中許多橡木桶已有100多年的歷史，有些甚至長達200年。當橡木桶中的酒液被判定達到最佳狀態後，每桶酒液的一部分會被轉移到玻璃大瓶中，等待最終評估和調配試驗——這是公司總部每天的例行程序。
